This holiday season, Ladurée has once again outdone itself with the Yule log 2024. Pastry chef Julien Alvarez has created an exquisite creation that seamlessly blends creativity and tradition. The Bûche Signature 2024 is a three-tiered trompe l’oeil that at first glance resembles a festive Christmas box, but upon closer inspection reveals itself to be a delightful log.
The log is a masterclass in flavor and texture, with a harmonious blend of almonds from the Estoublon estate-specifically the Ferragne and Lauranne varieties-and vanilla from Réunion Island. The base is a crispy shortbread layered with raw almond slivers, complemented by a muscovado sugar fondant and raw almond cookies. A semi-salted butter caramel infused with vanilla adds a rich, decadent note, while the almond paste and praline provide a velvety contrast. The ensemble is encased in a white chocolate shell for a luxurious finish.
The yule top layer of the log is a visual feast, designed to mimic a real box containing macaroons, eugenies and Christmas pearls. This added gourmet touch elevates the 2024 Yule log to a new level of elegance and indulgence.
