As the festive season approaches, Le Bristol Paris is once again transformed into a winter wonderland of exquisite delicacies, and the star of the show is undoubtedly the yule log 2024. This year’s creation is a collaboration between Pastry Chef Yu Tanaka and Arnaud Faye, the hotel’s new Executive Chef, who joined the team last May. Together, they have reimagined the art of holiday desserts, drawing inspiration from the magic of winter and the treasures of the garden.
The Bûche Signature, a limited edition of 50 pieces, is the crowning jewel of Le Bristol Paris’ festive offerings. This refined creation is inspired by the poetry of winter citrus, which reaches its peak in December. The tart, bitter notes of these sun-drenched fruits are expertly balanced with the floral sweetness of honey, creating a perfect harmony of flavors. With each bite, the palate is treated to a delicate dance of lemon, lime and lemon caviar pearls, all enhanced by a honey mousse infused with the subtle flavor of lemon leaves.
To add texture and depth to this unique dessert, Tanaka and Faye have incorporated pollen shortbread and honeycomb crunch to provide a satisfying contrast to the smooth, creamy honey mousse. Meanwhile, a tangy citrus marmalade and a soft honey cookie further enhance the flavor experience.
The yule log 2024 will be available for pre-order on the Click & Collect website from December 16th, and will be available for purchase directly from the Epicerie des Ateliers du Bristol Paris from December 21st to December 31st, 2024. For those who want to indulge in this festive treat, the Signature Log for 6 people is priced at €95 euros.
