The renowned Parisian café, Café de la Paix, and Repetto have collaborated to create “L’Adage à la rose,” a 2025 yule log that reinterprets traditional holiday baking. This limited-edition dessert draws inspiration from the famous rose scene in Sleeping Beauty, where Princess Aurora holds a single flower while surrounded by suitors.
This collaboration celebrates the 150th anniversary of the nearby Opéra Garnier, making it feel both timely and deeply rooted in Parisian culture. Chef Simon Letaillieur designed the creation to mirror Repetto’s signature tutu silhouette, essentially creating a wearable pastry.
White chocolate forms the exterior shell, sculpted to resemble the flowing fabric of a classical tutu. Inside, four distinct layers build complexity without overwhelming the palate. Mandarine-vanilla mousse provides lightness, and rosewater sponge cake adds delicate floral notes that complement rather than compete.
Praline-pistachio crunch delivers textural contrast, and candied mandarin paired with milk chocolate crèmeux rounds out the flavor profile. These components work together to create something that feels both familiar and completely new.
Letaillieur’s approach shows how pastry chefs can honor tradition while pushing creative boundaries. The rosewater element pays homage to classic French pâtisserie, yet the overall concept feels modern.
